A
Americano
The name derives its origins from WW2 when American GIs in Europe would pour hot water into espresso to approximate the coffee to which they were accustomed. As the name indicates, espresso for Americans.
B
Barista
Italian for bartender, skilled in the art and craft of artisan coffee making. Remember to tip your barista.



Breve
Espresso drinks made with 1/2 & 1/2 rather than milk. It makes the drink a bit sweeter and thicker.

Caffeine
It's the stuff that makes you go! The caffeine content of a cup of coffee varies depending mainly on the brewing method, how the bean is roasted, and by the variety of bean.



Cappuchino
Italian coffee drink prepared with espresso, hot milk and steamed milk foam. The texture and temperature of milk is of prime importance here. Milk is steamed to produce micro foam (created by introduction of tiny air bubbles into milk) giving the milk a velvety texture and sweetness. The hot foamed milk is poured into the espresso which results in a thick milk foam layer on top. Basicly a 5oz/6os latte.

A 4oz cappuccino.

Decaf
Part of the processing that coffee seeds undergo. Seeds are decaffeinated when they are still green. Many methods can remove caffeine from coffee, but all involve either soaking the green beans in hot water, called the "Swiss water" process, or steaming them - then using a solvent to dissolve caffeine-containing oils. Decaffeination is often done by processing companies, and the extracted caffeine is usually sold to the pharmaceutical industry.



Dry Cappuccino
Espresso with a generous amount of thick velvety foam. 5oz/6oz serving.

Ethiopia
Ancestors of today's Oromo people were believed to have been the first to recognize the energizing effect of the coffee bean plant. However, no direct evidence has been found indicating where in Africa coffee grew, or who among the natives might have used it as a stimulant, or even known about it earlier than the 17th century. The story of kaldi, the 9th-century Ethiopian goatherd who discovered coffee, did not appear in writing until 1671 and is probably apocrypahl. From Ethiopia, the beverage was introduced into the Arab world through Egypt and Yemen.

French press coffee creates a smooth, pure coffee flavor using a simple but effective process that full immersion, doesn't pass through a filter so you don't lose those natural aromatic coffee oils. Most coffee lovers agree that this process creates a superior cup of coffee.

Lever Espresso Machines
Known for their compelling simplicity of design and the unique flavor profile of the beverage they produce. Lever espresso machines are manual brewing devices that use a lever to push down a piston, which provides the right amount of pressure needed to brew espresso. The espresso making process of lever machines favors slow, thoughtful movements - an almost Zen-like moment of calm, focused creation. Pulling a perfect espresso shot from a lever espresso machine is a truly rewarding experience. The barista actually becomes a part of the brewing process. Lever machines also offer old world style and craftsmanship with the ability to brew exquisite espresso.

Macchiato
Macchiato simply means espresso stained/marked with milk. However, later the "mark" or "stain" came to refer to the foamed milk that was put on top to indicate the beverage has a little milk in it (usually about a teaspoon). In fact, the Portuguese word for a macchiato is "pingo," which means "drop."



Mocha
A latte with chocolate sauce. At Crema, we use a single origin Ghana chocolate.

Ristretto
Pulling a ristretto is to simply stop the extraction early, so less water has time to pass through the ground coffee. The resultant shot could be described as bolder, fuller, with more body and less bitterness.

Shots
Crema only pulls double ristretto shots. Sorry, no singles or triples here. 16oz drinks come with an option of two or four shots.

Toddy
24 hour cold brew coffee (iced coffee). Hhere at Crema, we do a complete submersion of coarsly ground coffee in cold water. It takes place in a glass vessal for 24 hours. After 24 hours is up, we slowly filter the coffee through the grounds by using a paper filter. Drip drip drip. That's the sound it makes. This method allows for an intensely flavorful, yet clean tasting iced coffee - not to mention a heck of a caffeine punch in every cup. We like to use a coffee from Aceh Sumatra called Aceh 19 - thanks Novo coffee roasters!
